That looks amazing. I love Tri Tip and hate that it's not readily available around here. The only place I've found in Nashville to get it is at a couple of specialty butchers and they charge $14.99 a pound for it.

I've been thinking about getting one of these to try cold smoking bacon. I normally cool smoke my bacon at around 180. Those that use these do you like it better cold smoked? About how long does it normally take to smoke a slab?

I did a lot of research on the Tappcue, but ultimately decided to wait until the smoke added wifi capability. I keep my smoker in the back of my yard and my Maverick will not read inside my house. I'm really surprised wifi has not become the standard on these devices instead of bluetooth.

Jim, What is it you have under your WSM? Do you use it to keep drippings off of your patio or as a heat protectant? I've been looking for something to help keep our new patio clean under my WSM's.
