If you need lp orifices you can buy the hex heads and a #70(.028) drill bit and drill them yourself. You will also need an lp regulator.
Edit:The hex heads should be 3/8". Hope this helps.
I light a few briquets w/ a torch, wait about 15 or 20 mins assemble the smoker and when it is about to target temp I put the meat on. Never timed it but I would say not more than forty mins.
Yeah I am waiting on a better chassis, I bought this one just for the red head! I have an RSS feed of all " Weber" from CL sent to my email client. I don't miss anything that is "Weber" related(pianos, carbs and grills) ;)

Yeah the gasser needs some work, it was a CL find for $5 and the frame also is rotten. Would like to add a right side flip up table and a side burner. I keep an eye on CL everyday looking to see what is out there, just have to be patient.

In place of the water pan I have been using a 14.5" x 7/8" pizza stone. Just pre heat it while getting the smoker ready. Have been very pleased so far.

Brinkmann did declare chapter 11, but so far it only affects returns and warranty parts. As of a month ago you could still get water pans, I ordered one along with some grates for my heavily moded ECB. ;-)
