WSM High Heat Turkey Breast

With T day coming in a few weeks I wanted to try a couple of practice runs on doing turkey on my wsm and performer as I haven’t done that before.
Today was the wsm. I was so impressed with the way the chicken came out on a high heat cook on the wsm I decided to try a turkey breast that way.
Well I wasn’t disappointed it came out perfect! Moist and the skin was crisp. 5 Lb. breast took just shy of 3 hours and pulled at 163 and rested for one hour. WSM held 330-340 perfectly. Used a few small chunks of pecan for the smoke.

The last picture shows a desert that we dreamed up after having a couple of drinks… well maybe a few more than a couple.
Involving corn bread that we made that turned into crumbs when we took it out of the oven

All I’ll say is we really can create good stuff when we’re half in the bag!

I think that you have that turkey perfected. Looks guud.
Funny, fixed a turkey breast too Monday. Got makin's for hunting sammies.
 
Good eye, got the idea from a post by Tim Murphy. It worked really well.

Thanks, Rich. For Thanksgiving I'd been toying with the idea of trying to fit a full turkey mounted on a sturdy beer can stand on the lower grate of my 14.5WSM, with the upper grate removed. Now that I've seen your results, I think I'll try that same high heat breast method and see how that goes first.
