WSM Buffalo Wings in 6 Easy Steps

Here's how I do it.

1. Light coals.

2. Joint the flappers. I use Alton Brown's method which is fast and easy.

3. Coals in the bottom, waterpan out, one lump of apple on the coals, wings on the top rack, all vents wide open, door cracked slightly open to get temps in the 325 range.

4. Make the sauce. Here's what I started with. I ended up with a tiny bit more butter and some Sriracha to get the heat/acidity just right.

5. Tossed.

6. Plated. Mine were sauced, Erin's had it on the side.

i love buffalo wings. i love chicken wings in general , but esp. buffalo....those look primo. nice job. great pictures , too.
 
a water-pan-less wsm is my favorite way to do grilled wing. Try mixing in a hot tub for a bit of a braise. I usually do something like 20 min direct, 20 hot tub, 20 direct. They end tender and crispy

I don't think a lot of people know the pan-less method, so I wanted to share. But I shall give your braised method a try. I assume the hot tub is wing sauce?
 
6 steps is good for me--I won't have to take off my shoes to keep track of where I am! Great looking wings! I have drumsticks, Buffalo style, on the menu tomorrow, and I hope they're even half as good as your wings!
 
I've never heard of a hot tub either?

Did you use any brown sugar in your sauce?

I'm hoping J comes back to comment, but I'm guessing its similar to a brat hot tub which is generally a foil pan with beer and/or butter on the grill.

No brown sugar in my wing sauce, just what was pictured.
