What a fiest! As always, this looks so good that it would be a shame to eat the meal. Well, almost. :)

The Brisket bacon, did you make it yourself? It's beef, isn't it?
I have something in the fridge that hopefully will look almost the same. Will post after the weekend, when the meat is fully cured.

Ya got me wanting some brats big time right about now, Jim! Great lookin' combo of toppings and sides. Also curious about the brisket bacon?
 
Those are some sweet lookin brats! I'd like to know more about the brisket bacon too...being a combination of two things I finally need to tackle!

Geir, it is Beef. It is Brisket. I did not make it, i bought it from Harry Hansen's Meat Service in Raymond Wisconsin

Also curious about the brisket bacon?

Tony, it's Brisket Bacon, you can eet it right out of the package or grill it fry it butt don't over do it, cuz you'll dry it out.
