Saturday I made a point to go to a local cheese shop: Widmers Cheese in Theresa, WI:

Jim ....I used apple. I didn't want to get too crazy since this was the first time I have done this. I just hope it turns out OK!

Jeff I used 4 unlit pieces of charcoal and 1 lit...with 2 chunks of apple wood!

It should last a while ... I think at least 4 months or time enough to eat it all!

You're going to be blown away by it. Everyone that has ever had mine has absolutely flipped over it.
