White bean soup w/smoked hocks

Used up a couple of the hocks I smoked the other day in a batch of white bean soup. I got started by taking the bones from my smoked chicken quarters, along with a couple of chicken carcasses from the freezer to make a killer batch of stock (have I mentioned how much I like using my Instant Pot to make stock??) I am always amazed at the added flavor dimension from including some smoked chicken parts in my stocks! :) Then I did a quick "pressure soak" of my beans in the IP (a few minutes on high is all it takes to soften them up.) Sautéed some onion, added the beans, hocks, stock, thyme, salt pepper, and set the IP to 12 minutes on high. Voila! Soup! Of course, I made it yesterday, so that it would have time to become that day old soup that always tastes better! :)

It was delicious! Creamy, great depth of flavor, could use maybe a few more veggies, and I'm thinking just a small bit of tomato paste to round things out. The soup had completely gelatinized overnight, so I knew it was going to be good when I was reheating it! :)

That soup looks outstanding. I agree day old soup is always better if there is any left that is!!
 
Now that looks really yummy. Kim and I got a pressure cooker for Christmas but have yet to use it. Those beautifully smoked hocks are the secret!
 
Looks amazing Rich, it's been a long time since I had H&B's. Gonna have to fix that
