So the CEO is away for business in the great state of Texas for a few days. So today I played with a new bread recipe and a nice dinner for one.
Picked up some Porto Bello's some red onion and a choice Porterhouse on sale. Coming to room temp with some nice spices on it

Tried a non Forkish Rye Bread recipe tonight. Everything went according to plan and I decided to add some golden raisins. The recipe uses orange zest, fennel anise and carraway seeds. My starter was ready in five hours

The finished dough was very high hydration and very difficult to work with

The taste was fantastic but the oven spring was more width than height and I figured it would not be great as the recipe called for at the minimum proof of one hour. At 45 minutes I did the spring test and it was over proofed. Live and learn

Like I said, it is delicious but I missed the spring and the bread needs work. But I will be eating some good Rye Raisin bread this week anyhow.
 
Even though I'm a firm believer that family is the most important ingredient in a good meal, I must say that these types of occasional "one man dinners" are glorious. The steak and sides look fantastic, Bill.

P.S. You should have the CEO stop by Franklin BBQ and bring you back a couple pounds of brisket in her carry-on luggage ;).
 
That looks great. Your poor wife probably had to attend a banquet at the Hilton Hotel. Her loss. She'll have to get over it.
 
Bill, you out did yourself again. That is one fantastic dinner for one and that bread WOW!!! Just pass the bread with some butter and jelly and I'd be a happy camper.:)
 
Great one man dinner there Bill. I did that a few nights ago when Barb went to a ladies wine tasting party. What's scary about the bread is I understood everything you said, not that I could offer any advice yet but at least I'm starting to get the terminology.
