So I have a green egg and a WSM and have done many Ribs, Pulled Pork, Pulled Beef, Chickens and Turkeys, Poor mans burnt ends. Only a few Briskets. What would you try next, feeling like I am in a bit of a rut and want to try something new.

Homemade bacon, pork belly burnt ends, beef jerky, pork rib roast....
 
I have this cookbook called "Grillin' Wild" by Rick Brown I think you would like. It has recipes on how to grill Alligator, Antelope, fish, boar, bear, sheep, elk, rabbit, wild goose, frog legs and.....you get the idea. lol Oh and one for me, Shrimp and Crab Stuffed Trout. Sounds yummy. Glad to post any recipe if you are interested in anything.

Agggggg, just saw one for rattlesnake.
 
Why not more Veggies? Especially in season.
We grill/roast plenty of veggies from the garden and local farmers market. Do meat on one grill, veggies on another.
For instance - char and roast assorted vegetables, tomatoes, squash, beans, you name it, for pasta primavera.

Do some gourmet pizzas!
This week I chopped up the left over prime rib roast. I added mushrooms and olives as well. I baked the pizzas in the charcoal BBQ on top of the cast iron griddle (or you could use a pizza stone, large cast iron pan etc). The family said it was the best pizza they've ever had.

For the crust I used multigrain flour and this recipe. Or just use ready made flatbreads.

Thanks Joan, all good Ideas...I have done a bit of seafood and I did a dessert Pizza which was amazing. Fresh pizza dough, Nutella, Banana and mini marshmallows. It was a hit. The book reco sounds amazing!

I usually do Pizza on the Green Egg as you can get is screaming hot. WSM would be a bit more of a challenge due to the heat. Great ideas!
