I've done chicken, pork butt, and spares in the wsm. I'm not sure the wallet can afford a brisket right now, but I'm itching to try something new. Anyone have any suggestions?
I've had good luck with the smaller pork loins from wegmans in the club pack. Average about 3hrs, great with a Caribbean rub.
It's getting close to turkey time.

The final product is pretty daggum good too!
If you even like bologna a little, try smoking some. Dr. BBQ's method is a simple sugarless creole rub and smoked with pecan. I had a few slices with toast this morning for breakfast.
