What is everyone cooking this weekend?


 
We ended up not smoking fish or chuck, but instead grilled a Santa Maria tri-tip. I posted info and a photo in the photo gallery.
 
Making bacon wrapped sriracha onion rings for a backyard get together Saturday evening... debating smoking them this time instead of just grilling them.
 
I am searing some Porterhouse steaks tonight and slow cooking some Short Ribs, 144 °F / 62*°C, 48 hours in the hot tub for later in the weekend.

Tonight: king crab, jalapeño hush puppies and charred-grilled asparagus salad.

Tomorrow: smoked double-thick pork chops, spicy roasted cauliflower, and loaded sweet potato skins.

Maxwell Street smoked polish sausage with smoked italian sausage to go with it. For Labor Day, the traditional burgers and dogs, all done
on the WSM 14.5 which has become my new favorite all around cooker.
 
Chile Verde Colorado style.
Got some fresh Hatch NewMex chiles & some pork butt.
A match made in heaven!!!
 
I'll be soaking some turkey drumsticks in Worcestershire and Not Your Fathers Rootbeer, for 24 hours, then rubbing them with my sweet and spicy rub, then wrapping in bacon!
 
This coming weekend it will be smoked chicken breasts on Saturday, and a nice rack of St Louis cut ribs on Sunday.
