Got some fun time on Friday and finished up my Kielbasa and also did a quick loaf of bread for some sandwiches. A few pic's.

Four pounds of pork shoulder and one pound of pork fat. Mixed in the seasonings, squished it all together for about 5 minutes and placed in fridge to get it nice and cold.

On the WSM @ around 180. Pecan for smoke.

Six hours later, all done smoking. On to ice bath, hang for an hour and to fridge. Vac sealed today.

This was very tasty. Had a link for lunch today. Great flavor!

Lastly a quick loaf of sourdough for lunches this week.

Good looking sausage. I'm guaranteed that it tastes super good. Makes me want some. Oh... and the bread, too.
 
Sausage and bread look great, Cliff!! I made some sausage today, too, but obviously need some stuffing lessons from you.....mine are not so uniform. Oh, well, they taste the same even if they have some odd shapes. :)

What bread are you making these days?
