I tried my hand at smoking a couple venison fattys on the Performer this past Sunday. Try to ignore the sad state of my grill - I have it on good authority there'll be a new grill brush in my stocking on Christmas day. Here they are: one is stuffed with Scallions, Spinach and shredded mozzarella and cheddar cheeses; the other has Scallions, Jalapenos and shredded Pepper Jack.
Halfway there, they were looking pretty good. I battled the wind and temperature spikes throughout the cook.

I learned quite a bit from this first effort. A couple temperature flares resulted in the bacon being overcooked but the fatty itself was delicious. Thanks for looking.
