Coated the beef with Penseyes Southwestern Rub instead of black pepper, and substituted Modelo Negra beer. Also used poblano's instead of green peppers. Served it in two fire roasted poblanos mixed with cojita cheese and corn. Corn was grilled and removed from the cob. Put it back on the grill in a cast iron skillet for about 20 minutes, covered. Added some more cojita on top and cooked uncovered for a few more minutes. Served with a salad and cilantro pepita ceasar dressing.
I thought the Southwest rub was a touch sweet and would try something else next time, but overall a huge it.
