After a couple months, Pammi and I are getting used to our new home on wheels! Haven’t done a bunch of cooking, yet, but it’s certainly coming!
We had some friends over after a couple weeks. We had been down to Georgia and got some shrimp and crab Pammi made some crab cakes and I cooked them on the Blackstone along with some scallops. That was our appetizer before some shrimp and grits
Our travels next took us to Tennessee, Chattanooga for a week, then to just south of Nashville to see friends. It was really good to see them and we cooked chicken sliders and hotdogs for the boys
We had the boys overnight one night. They had a blast! We cooked breakfast the next morning. Bacon, sausage and eggs on the griddle and Pammi cooked some pancakes inside

They came for dinner the next night. Pork chops, potato planks, asparagus for them and a zucchini for me. Very tasty stuff!

Unfortunately, not only did we get some good quality time with the boys, we also got the ‘Rona! That kicked our butts HARD!! 2 weeks later, I’m finally feeling better!
Last week, we didn’t cook much. Lost some weight, but I’m sure that’ll be back!
We’ve been about halfway between DC and Baltimore this week. I finally dug the griddle out yesterday for some salmon with a yummy hot honey glaze

Another breakfast this morning, bacon and pancakes. They just taste better cooked outside!
Pizza was for dinner tonight. Tomato, onion, pepper, pepperoni and sausage. I cooked the crust on one side, flipped it, topped it and put it on a rack with a dome to cover and melt the cheese
On to New Jersey on Monday to see my dad for a couple weeks. Thanks for looking everyone!
