Unthawing Prime Rib

Hey Gang,
I plan on smoking a Prime Rib that I picked up from the local butcher, for Father's Day. It's an 8.5 pounder. It's been in the freezer since Sunday. I've never had to unthaw a piece of meat this large before. How much time is needed to unthaw something this large with bones? Do I need to take it out today, tomorrow, or Saturday?

Thanks,
Amp

I would take it out now and put in the the refrigerator so it will defrost in time. Prefer this to defrosting fast in cold water. Recently defrosted two pork butts about the same weight in the fridge and it took about 2 1/2 days. Don't wait to long. Better they are thawed a little early than to late.

i would put it in the fridge today and take it out early early sunday morning to cook later in the day..

Do you have a defrost setting on your microwave? I would defrost it in the microwave today and let it set in the fridge till the morning you plan on cooking it.

For large frozen things that are completely sealed (as in NO way for water to get into the package), I often put them into a large pot of cold water, then put that in the fridge and change the water about every 12 hours. OR, if it's too large to fit into a pot, or the pot won't fit in the fridge, I put the item into a big drink cooler (we have a 5-gallon that I use to defrost our Thanksgiving turkey every year) and cover it with cold water. Again, change the water about every 12 hours.

I think you mean THAW, un thawing would be freezing.
Start with the fridge, you should be fine. The slower the thaw the better for the beef, thawing too fast will make the meat mushy. Pork is much less susceptible to that, I'm thawing a big butt for next weekend and got it out yesterday. I need to pick up another but, I have really limited fridge space, time for the big cooler to come out for the summer!
