Turkey Lunch meat

Not much to say on this other than I need to save $$ as the Mrs isn't going back to work. We save on day-care, but lose a little on the back end. Oh well, i think its worth it for the little guy to stay at home.

First step! Make lunch meat for the week! Dry rubbed with the last of the poultry rub from the meat market and smoked with 1 piece of pecan on the OTS

oh and the Restaurant Depot I was building (I had the electrical contract) finally opened. and I got in good with the manager and holy copious amounts of charcoal!



I figured I'd try a bag of Royal Oak and scored one for $10. The meat selection was pretty amazing as well.

I was lucky my mother was able to help me raise my kids. She was excited to help since I'm the oldest and had kids last.
 
Thanks all. Hey dex. I was shooting for a grill temp of 275 but ended up around 375. No biggie but is was done in about an hour and half when the breast hit 165*
 
Good points...I agree, need me a meat slicer.

How long in the fridge will it stay fresh? I wonder if it will still taste as good for sandwiches if some frozen and defrosted at a later date.
 
Very nice, you should have some great leftover meals with that!!! Check out the deli meats RD sells. They have a pretty good selection at reasonable prices. Sure beats going to the deli and you can smoke your own!!

At least a couple of weeks. My wife cooks whole turkey breasts in the oven, shreds the meat off the carcass and makes several packages - she'll keep one out for immediate use and freeze the others. They come out one at a time, and I can't tell when the change from fresh to frozen takes place. Plus, a nice shredded turkey sandwich in my lunch helps make my job more tolerable! BUT - I'm really wanting to smoke one or rotisserie one for lunch...that's on my list of stuff to do....
 
That's an excellent looking turkey breast. I plan on doing a Turkey breast pastrami in a few days. I'll post it when I get to it. It has been in the freezer long enough. Time to get smokin'!! I'll be doing mine at high heat on the 18.5" WSM with some apple wood for smoke.
