Well, my lofty goal was to try a long sous-vide on a tri tip, but my schedule got the best of me, so it was only in the water bath for about 2 hours. I certainly didn't notice any change in tenderness, etc, with this short of a time frame, but I can tell ya, it was dang good!!! :) I seared it on my Genesis for about 3 minutes per side. Perfection.....in my opinion.

While I didn't notice any improvement from the sous vide, I guarantee you that this was tasty on my plate with some brown rice, and sautéed spinach with garlic. And I did quite enjoy one of these with it.....

That's a mighty fine looking TT. That's how I used to cook them, I now cook them a little more, mostly because I find the more rarer the harder to digest (for me)
