How closely does the grain structure of those 3 pieces of meat follow what Chris shows in his how-to article ?

direct and indirect grilling until it reaches an internal temp of 128ºF.... rested a bit before slicing...

...then layered on soft Kaiser rolls topped with Silver Spring Horseradish...

...roasted Brussels and onions completed the fine dinnerware.

Looks awesome!,, Thanks Jim. Local Costco’s In Milwaukee have whole Choice tri-tip but it’s a Pre marinated product.. Same price as sendiks... if I wasn’t doing brisket right now I’d be chasing one of these down. What was your recipe for home made Santa Maria seasoning?
 
I cooked my first 20 tri-tips like a steak, with a slide over to the cool side of the grill.
My little monkey brain didn’t see any other way until I started reading BBQ forums.

I’ve seen those tris at Costco, and I passed on them too.
here’s the simple recipe:
Tri Tip Seasoning
1 tablespoon sea salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon black pepper
1/2 teaspoon smoked paprika
1/2 teaspoon cayenne pepper

Great looking TT Jim. Tri Tip is our favorite cut. I used to get them all the time in the managers mark down dog food section, but since the Covid came along there is no dog food section anymore. Actually there is no tri tips period. Have to bite the bullet and try Costco.
Thanks for the TT rub recipe I'll give it a whirl, always looking for something new to try.
