Made this once before and was happy with the results. This time I actually had the Chef Merito seasoning to use with it.

Everything marinaded for 4 hours.


On the grill we go. Indirect for a short time.


Beverage of choice while cooking. A good local Pale Ale.


Let it cook too long indirect. So when I moved to direct heat, I was not able to get the char I was wanted. Internal temp was already at 148.

Over cooked a little but the flavor was incredible. Sorry for the poor plated pic, I was hungry!
