As I’ve enjoyed both snails and sweetbreads (lambs thymus) I might be inclined to be “adventurous” in some circles.
Now I’m not saying I necessarily want to be the Guinea pig but, cultures all over the world eat things others find “odd”!

I'm with @Timothy F. Lewis on snails and sweetbreads but will add another delicious meat that many find revolting. Chitterlings (chitlins) are one of my favorites. Miriam won't let me cook them in the house and won't even try them. Her loss is my gain

I was training a new driver once and the conversation turned to BBQ. We discussed different cuts and cooking styles.
Mid conversation he asked me if I’d ever eaten chitterlings!
And when I replied no, HE responded with,” The secret to cooking chitterlings is ya gotta cook the s%#* outta them!”
He was cracking himself up about that the rest of the day!!
