I was training a new driver once and the conversation turned to BBQ. We discussed different cuts and cooking styles.
Mid conversation he asked me if I’d ever eaten chitterlings!
And when I replied no, HE responded with,” The secret to cooking chitterlings is ya gotta cook the s%#* outta them!”
He was cracking himself up about that the rest of the day!! 😂
Same with kidney beans...you gotta cook the pi$$ out of them.
 
Never had chitterlings, perfectly willing to try, no idea how to cook them. Need to find a wise person to share!
Oh, I’m told that Guinea pig is quite delicious!
I've only done them one way. Clean well, cut in 2" pieces and boil in salted water for an hour, drain then roll in cornmeal and fry until golden brown. Usually eat them in a sammich on white bread with mayo. That's the way I first had them 50 some years ago. Been years since I've had them. Not easy to find around here.

Better to rinse it out before you cook them :)

I see them in frozen 3 gallon buckets around here most of the time! I would be willing to try some but, I’m not going to attempt the learning curve without knowing whether or not I like them.

That's one of the reasons I haven't had any in ages. If I could find them fresh around here, I would break a bucket down into smaller packages and freeze. Too much hassle thawing, separating and refreezing.
