Thanksgiving Leftovers

Rotisseried an Ancho/Garlic rubbed turkey for Thanksgiving.

Since there were only two of us to enjoy the bird, there was tons of leftovers.

Made some soup.

And some enchiladas de pavo suiza.

Con crema.

Well, now I'm hungry. I think I enjoy leftovers as much or even more than the main meal. Yours looks terrific Robert. We've been working on ours too. Hot turkey sandwiches and I'm working on a casserole to use up some more.

Turkey left overs are the best. With our left overs we did another dinner, soup and turkey hash. Plus the pups had their share of turkey, stuffing, mash potatoes and gravy.

Great use of the leftovers Robert. I made soup and we froze 1/2 of the turkey breast for future enchiladas.
