Thanks to Bill, I recently got Ken Forkish's "Flour, Water, Salt, Yeast". Made my first batch tonight and I like where it is taking me. No grills involved - despite multiple shovelings, I couldn't keep up with this blizzard. Almost 3 feet of snow here in the last 24 hours. But we have warm, fresh bread.

First loaf, going by the book. This is the Saturday White Bread.





Ken's recipes make two loaves. But I only have one round proofing basket and one DO. So for the second one, I put it in a baguette shaped basket and cooked it on a pizza stone. Slightly lower temp and no steam, but it still turned out well.



Made some meat sauce and pasta, and served it with that. Maybe I'll get back to outdoor cooking tomorrow.


 
Wow, Very nice first shot Jim. Just got my copy of "flour, water, salt, yeast" yesterday. Going to start today, actually with the same loaf you did. Hope mine comes out as nice as yours did.
Bill has helped me a lot along with Len and Cliff. Don't think I'll ever get to the perfection level they have but if I can make some decent loafs I'll be a happy camper.

Fantastic job Jim, you nailed that one for sure. I like the idea of the baguette shaped basket and pizza stone, have to try that one.
