I generally do a variation on this recipe for Texan style beef chili.
Did I mention that I am loving Richard Thompson's latest album, Electric? Good Things Happen to Bad People -- great to cook and grill to. For your listening pleasure...
Back to the cooking. Dry-fried the peppercorns, coriander seeds, cumin and cinnamon stick until fragrant, then ground up all but the cinnamon.
Dried ancho chilies, guajillo, cascabel and mole peppers were toasted and ground.
Chuck steak, jalapenos, and onions were grilled.
Head of garlic was dry-fried until soft and nutty. Yum.
Aromatics, including another handful of chopped garlic, were chopped and sautéed in bacon fat. Ground chilies and spices were added, along with tomato puree, broth, etc.
Everything simmered for a couple hours until beef was getting tender. Kidney beans were added to simmer another half hour. Great chili and great with this cornbread from Cat Cora.
