Felt like some of my Carne Asada and decided to go full Mexicana tonight. Started with some nice Flank, went Medieval on it and dressed it in Chef Merito, then the fixins for the marinade are waiting

A little trick from Bayless, after dicing the onions rinse them under cool tap water, they come out real sweet and crisp

Beautiful pictures and great looking steaks.

However, those blue points snuck into the middle take the cake for me :) The "simple" taste of plain shucked oysters is a beautiful thing.
