Howdy folks...I wanted to do a nice brisket for our Super Bowl party we were going to on Sunday...if you've been keeping tabs on my cooks and BS you'll know that we have a group of friends they get together for Seattle games..this actually started in pre-season and we have had a good time with it! Anyway Super Bowl brisket..started with a Wal mart packer..14 lbs which I ended up trimming quite a
Bit of and cut the point off and wrapped it for burgers later!
Seasoned it with weber steak and chop(I was going to make a simple rub but this had everything I wanted already so perfect!)

Got up early and fired up some kingsford!

Got it loaded into the WSM...the better part of 10lbs of coals! Used hickory for smoke!

Brisket on and I didn't bother waiting for temps to stabilize ..this was my fists high heat brisket so I expected temps crazy anyway!

After about 20 minutes my cooker settled in at a good high heat temp!

Everything was good so I started some cowboy coffee!

Whipped up a egg McBob and enjoyed the am!!(wish I would have fired up a grill but it was early and cold '

So my brisket went fat side down for 3 hours, foiled for 2 and then out for another 1...all at the 300ish temp that maintained for 6 hours!

Foiled it at 195 and headed to my buddy's house and fired up his performer and cooked up my ABT's I got together the nite prior! At this point the pre game party started and lots of brews were flowing!
