Super Hawks brisket and fun!!

Howdy folks...I wanted to do a nice brisket for our Super Bowl party we were going to on Sunday...if you've been keeping tabs on my cooks and BS you'll know that we have a group of friends they get together for Seattle games..this actually started in pre-season and we have had a good time with it! Anyway Super Bowl brisket..started with a Wal mart packer..14 lbs which I ended up trimming quite a
Bit of and cut the point off and wrapped it for burgers later!
Seasoned it with weber steak and chop(I was going to make a simple rub but this had everything I wanted already so perfect!)

Got up early and fired up some kingsford!

Got it loaded into the WSM...the better part of 10lbs of coals! Used hickory for smoke!

Brisket on and I didn't bother waiting for temps to stabilize ..this was my fists high heat brisket so I expected temps crazy anyway!

After about 20 minutes my cooker settled in at a good high heat temp!

Everything was good so I started some cowboy coffee!

Whipped up a egg McBob and enjoyed the am!!(wish I would have fired up a grill but it was early and cold '

So my brisket went fat side down for 3 hours, foiled for 2 and then out for another 1...all at the 300ish temp that maintained for 6 hours!

Foiled it at 195 and headed to my buddy's house and fired up his performer and cooked up my ABT's I got together the nite prior! At this point the pre game party started and lots of brews were flowing!

How did you like the HH version my friend? I have done Butt's high heat and they were great but not a brisket yet. Looks real good, love the ABT's
Oh and congrats, one h@ll of a smackdown last night
 
Ok...peppers went on for about an hour or so...brisket was cut up at the start of the game..

Here was one of many plates..couple Briskey Sammie's wth slaw and #5 sauce!! Beans..beer!

We actually had tons of good snack food..brisket came out real good..the high heat worked well although I did notice a few things...burned a lot of charcoal in 6 hours, although there was a good smoke ring I didn't get a ton of smoke flavor, bark really suffered from the foil and never really recovered. Great flavor and very tender!
Oh my buddy surprised me with a late birthday gift!


Hawks kicked Butt!! Pretty one sided game but it was a good feeling to finally win a Super Bowl..I've been a Seahawks fan since I was about 5.....crazy...Russ what happened to the broncs buddy? Not sure they even showed!

Great looking cook!! It's been a long time for SeaHawk fans.
I started following them in the 80s when I was stationed in Bremerton.
So congratulations on a great cook and a fantastic game.

Well Bill...flavor was good, got nice and tender and well I cooked this 10 lbs in 6
Hours so it worked real well..if not pressed for time I probably would have tried going unfoiled to keep up the bark. We had places to be and beer to drink!

Actually if it wasn't for the jar of apple pie I drank after the hawks one things would not be so hazy!

Morgan, Congratulations on a big Seahawk win. No, the Bronco's didn't show. Sorry that we didn't put on a Superbowl performance. And yes you get bragging rights. So have a good time with it. Will have to get you guys next year. I can see Denver opening Thursday night @ Seattle. Oh by the way brisket looked good.

Good lookin chow. The Broncos would have given you a run for your money if it wasn't for their offense, defense, special teams, and coaching!
 
Thanks everyone..appreciate the feed back..I was worried about this cook as I'm sort of partial to low and slow but I may try this again when I don't have anybody to feed and no time constraints!!
