Super Bowl Flappers - Yes...that late

Howdy all. Love me some hot wings
Marinated in garlic, onion, ginger, cilantro and cayenne for about 2 hours then air chilled for 4.



While all that is happening, make some blue cheese dressing






And onto a 250* grill with 3 small chunks of grape vine for mild smoke. After about an hour I like to toss them around to evenly cook/smoke.



While that is finishing, time to make the wing sauce.
saute garlic, onion, habanero, jalapeno, and some dried chiles (unnamed but hot!) in butter, oil and salt.



After that gets happy



Add apple cider vinegar, a bottle of crystal hot sauce, copious amounts of butter, and more dried chiles. Then simmer and reduce.



Then run it through a blender to get the consistency smooth.



After 2 hours on the grill, throw them to the hot side for a sear.



Almost too good to eat...

Nice post! I bet that sauce is hot enough to take the chrome of a bumper! That is one brave little girl.
 
Man, you were not messing around with thoes chillies! That close up of the chicken wing covered in your chillie sauce, looks fantastic!
