I picked up a couple of chickens at Costco the other day. I tried to pay them respect for their sacrifice the best way I knew how.....over high heat on my WSM. Both birds were brined in Oak Ridge's Game Changer All Purpose Brine. One was rubbed with Oak Ridge Secret Weapon Pork and Chicken rub. The other was Penzey's Northwoods Fire. I fired up with WSM with a full ring of unlit KBB and a couple small pieces of oak and one chunk of apple. Poured on a full chimney of Kingsford and waited for the smoke to die down before putting the birds on. This is how it went down.
First, a couple of sideline players. Some garden fresh red peppers and grocery store fresh taters. Peppers were simply sliced, taters got some EVOO, S&P, and crushed rosemary.
Bird on the left was Oak Ridge and the one on the right was Northwoods Fire (good stuff).
This was at some point during the cook. Not sure when, but it was after the leg and thigh fell off of one of the birds.
This was the beer of choice for the night.

The obligatory dog picture. He can stare all he wants but he ain't getting any of this.
The better half made a nice salad to go with the food. I was too full to eat it so it will become my lunch tomorrow.

The chicken turned out delicious. If you haven't tried grilling chicken on your WSM yet give it a shot.
