I am doing wings for my son and I on Saturday and breaking in the new vortex and second cook on my WSK. I can't wait to try it out.This one is the medium vortex. I use it almost every time I cook hot and fast on my Summit Kamado, as it makes burning my food near impossible. I’ll usually replace the centre rack a few minutes before pulling the food off the grill, and then place whatever protein I’m cooking - over the coals. This also allows the centre rack to heat up.
And yep! That’s just foil around the inside. Makes clean up a snap.
