Stuffed Turkey Meatloaf

Inspired by Jim's snowy meatloaf cook - I fired up the Performer for dinner tonight.

2 lbs. of ground turkey with chopped onion - stuffed with spinach, Sundried tomatoes, chopped jalapenos and feta cheese. Topped with half a can of tomato sauce (for color). Asparagus with smashed garlic:

Just about finished. Meatloaf went for about 60-75 minutes at 385-400.

First time making turkey meatloaf. Definitely a keeper. Will probably add more sundried tomatoes next time as they were a bit muted.

Scott...looks super!! Love your pic's and meat loaf held together real nice...what did ya use for a binder cause my turkey meatloaf always turns out like a crashes tater? Beer looks tasty as well..."mo"....gotta be good!
 
Great all around, from the meatloaf to the beer glass. Gonna have to try that, and the asparagus/garlic roast.

The recipe (originally from Big Daddy's House) called for instant grits but I used 2 eggs, about 3/4 panko and also added about 1/4 - 1/2 cup chicken broth. There's also 1T of Worcestershire. This was for 2 lbs of turkey. sorry I don't have exact on the panko and broth but I kinda went by feel till I like the consistency.

Maine Beer Co. Just started coming to NJ around Christmas time. Mo is great but their IPA called Lunch is fricken awesome.
