Stuffed Pork Chops on a Rainy Night

I had the butcher at Safeway cut me a couple of thick bone in pork chops. They were 1 3/4 inches thick. Sided them up with a couple of baked russets and roasted cauliflower, both on the grill also.



Stuffing ingredients. The ones that aren't readily identifiable are minced garlic, chopped sun dried tomatoes and mushrooms.



Sauteed the garlic in a little oil, added the mushrooms and sun dried tomatoes.



Added the bag of spinach and let it wilt down.



After about 5 minutes it was done. Pulled and let it cool a couple of minutes and added cream cheese and non seasoned bread crumbs. This last step not shown.



All stuffed.



Took a small head of cauliflower and coated with butter and then topped with grated parmesan and Johnny's Seasoning Salt. Wrapped cauliflower in two layers of hd foil and cooked it 45 minutes, indirect on grill with the potatoes. I've posted this part or something similar fairly recently so I'll spare you the photo.



Got the chops on.

Very nice Cliff, those chops are gorgeous wish we had a butcher here. That cauliflower is a great idea too.
Doing a version of your Rusty Chicken tonight. Fairly warm so I'll venture out to one of the gassers for the cook.:rolleyes:
 
Cliff, what a great looking rainy night dinner. We like cauliflower so will have to give that a try real soon.
If it was raining at your place looks like we will get more snow here.
 
Primo!! Wifey loves stuffed pork chops. And cauliflower. Maybe make some for an upcoming anniversary.
 
Cliff, awesome cook love stuffed port chops and that cauliflower WOW!!! Rich and I love cauliflower so will be giving that one a try real soon. Thanks for sharing these great cooks my friend.
