Stuffed Mediterranean Chicken Thighs

Hello All,

Peter inspired me with his post earlier in the week so I decided to try some stuffed chicken thighs roulade style. I made a stuffing from home made Italian sausage, spinach, and feta cheese. I brined some large chicken thighs and boned them. I stuffed them, rolled them up, tied them, and grilled them basting with my Mediterranean Marinade.

On the grill direct for about five minutes


Moved indirect and cooked covered to internal of 170


Back to the direct side to crisp up the skin


Added corn direct to roast/steam


Plated

Well this was an adventure. The meal was excellent and the family enjoyed it a lot. The flavor profile was good - the olive oil/lemon in the marinade worked very well with the stuffing. My roulade technique needs some work. The prep on this was difficult but the results were worth the effort. Thanks for looking.
