We went to Providence RI a few weeks ago and we had some great street style tacos at this great spot.
My son (and I) loved these and he has been asking for me to try recreate them. So between my son's request, my own hankering, and Case's and Tim's great taco bowl post I had to go for it.
I started with some bone in skin on thighs and then removed the bones and saved them for homemade ramen that I am going to start tomorrow. Got a salt brine and a little seasoning on the skin side and in the frig for a dry brine.
Got my wet rub on them then more seasoning (also did 2 BSCB for wife and one daughter)
On the kettle. Those important skin on thighs went right over the fire.
The perfect tunes for this cook. This great American punk rock band made a Mariachi album and it felt so right while cooking.
And the flip!!!
And done.
Chopped.
And made into tacos.
Beans, queso blanco, and salsa on bottom, chicken, cheese, and a little more salsa to finish all on a toasted corn tortillas.
They were top notch tacos, the chicken with the crackling skin and the warm corn tortillas are what really made the meal. I literally had four of these.
This was such a great cook. I was worried I wasn't going to get the cook in because it started raining around early afternoon. But it stopped raining and cleared up to perfect sunny skies right before I started my cook. I literally got all my stuff for the cook, brought it outside, and spent the whole time hanging out with a cold glass of tea, listening to my tunes, loved every bit of this cook.
