Stout & Pepper Beef - not a good start

1st time trying this recipe - it always looks so good when you guys to do it.
Here's how mine started :0(


Hoping things will turn around quickly.
 
Also burned my finger when grabbing the wrong place on the charcoal chimney...

but things are looking up. got the 2.2lb chuck on the WSM at 260F with a couple chunks of red oak.
Here it is all prepped sans one of their good friends:

 
everything looks okeydoke sofar...
that's a long cook, hope you're planning on eetin' this tomorrow
 
Researching on the forum folks said its about 6 hours. its reading 163F right now after 90 minutes @260F lid temp.
Should be foiling it soon and am expecting up to 3 hours in the foil. Should put me at 6 o'clock PM PST for dinner. I hope, but tomorrow is fine too. Looks like it would go good with eggs.
 
Milan, even IF you eet today, and i'm sure you will (did not KNOW where Everett was :rolleyes: ), it'll be OUTSTANDINGLY SENSATIONAL the next day OR month IF you vacuum seal and freeze it!
I have enough for like three BULKY sammies in the freezer now....

I cried when I saw the first picture but the others cheered me back up. I think this is one of those dishes that actually taste better the next day after everything has had a chance to sit and stew together. Tastes great the first day though.

I'm with Jim. Made some of this a while back, vacuum packed, and froze. It was great as leftovers.
 
Ahh the trials and tribulations of cooking outside!! Looks pretty good so far!! I'm sure it will work out fine...drink another beer and let it cook down!
 
She's all finished. Very good, but quite spicy! I must have gotten 3 hot Jalepenos. Looking forward to lunch tomorrow.
