Steak Night At Our House

Cliff Bartlett

R.I.P. 5/17/2021
We were at Costco the other day for our twice weekly visit. Cruised by the Prime Meat section (that section has cost me lots of money) and took a peek at the steaks. They didn't have any Rib Eyes, our favorite, but there were a couple of nice looking New Yorks. Picked them up along with our other "essential stuff". Decided to do them last night after they rested in the fridge a couple of days. Nothing fancy, just K Salt and coarse black pepper on the steaks. My wife likes Sweet Potato Fries so I did those along with a grilled vegetable/fruit medley in my trusty CI Baking dish. Got a little carried away with the pictures so fast forward if you like. Here we go.

For the Sweet Potato Fries I used a Weber recipe, Spicy Sweet Potatoes with Chili Sour Cream. This first shot is of the ingredients in a bowl ready to be whisked. Sour Cream along with some chopped cilantro, lime juice, some Sriracha Sauce, K Salt and some chopped garlic.

Here are the dry spices for the sweet potatoes. Some paprika, k salt, black pepper, cumin, coriander and some ground cayenne.

Here are two sweet potatoes, one naked and one fully clothed. Some idiot forgot to take pic before peeling. No biggie, I guess. About one pound each.

Here are the fries sliced up, tossed in oil and their spices.

Here are the veggies for tonight. I used a red bell pepper, one yellow summer squash, one sweet onion, one ear grilled corn, sliced off the cob, and finally a few pineapple spears roughly chopped.

Steaks are seasoned and ready to go.

Everything is ready for the grilling.

Veggies on Smokey Joe.

Sweet Potato Fries on the pan to begin the cook.

Quick peek. The veggies are under there somewhere. Lid wouldn't quite fit over CI dish on Smokey.

Will have to continue this post in a part 2. Steaks, etc. to follow.

Here we go, Part 2.

Got a nice sear on the steaks. Very high heat, about 2 minutes a side.

Moved the steaks over to indirect for about an additional four minutes.

Here's a couple of silly shots I took while waiting for everything to finish up. It was nearly 9:00 pm when I took them. There was a very warm wind blowing and between that and the Sierra Nevada, I thought this looked pretty. First is our Fruitless Mulberry and second is one our Blue Oaks.

Veggies are done.

Sweet Potato Fries are done.

All plated and ready to eat.

Everything turned out great. Those Sweet Potato Fries were fantastic, and I'm a Russet Man too. Very fun cook. Thank you all for looking.

Great Cook!

I really need to come up and see my new buddy Cliff. Hit the lake, get a bunch of Panfish & Bass off Shasta, and Q-them-up at Cliff's place....

Darn Cliff.....I might have to take a knee on this one! When I saw your name and what you were cooking I knew it was going to be good and then you threw in the sides! Dang! I don't think I've ever made a meal look as good as yours.

I'm not that far away when all of this happens Chuck, I'm old enough to buy the beer!

That’s another great cook! I miss my performer. Been able to use it a couple of times but because of the high winds (40 mph today) and tinder dry conditions we mostly only use the Genesis. You can't get a cook like yours on gas that's for sure.

Thanks everyone for all the compliments. Appreciate it very much.

Hey Chuck... The way things are going up here, the lake will be empty this summer!!

Rich.... Feel your pain over the harsh fire conditions. A lot of north winds this year and brutally dry conditions due to drought. I'd like to get one of those Santa Maria grills like I see John and some of the guys using, but I think open cooking, at least during the summer, is out of the question.

Thanks again everyone.
