St Louis Cut Spares

I think NeilH and I have the same idea tody: St Louis Cut Spares.

I started with two chimneys full of natural lump charcoal

and placed a chimney of lit on the pile

and spread them out for my fire

Then, I filled the water pan to within one inch of the top with water

after the smoke cleared and it was running clean I added a cpl pieces of hickory

Coated with spicy brown and dusting with Bad Byron's, I loaded the bottom grate with trimmings

and place three racks on the top grate with another piece of trim and some chef's treats

Three hours in I pulled the trimmings SWMBO wanted for a pot of black eye peas and I tasted the treats. We are on track

HAHA Thin Blue Smoke

I decided to wrap a cpl racks in foil with brown sugar, tiger sauce, parkay, and honey. The other I spritz with apple juice and bourbon.

LOL, well, I glazed two racks with different sauces and sprinkled one with Daddy's Sweat Love. By the time I went to get the camera, the whole fam damily decended upon the racks and so all I got was a photo of my plate.

Looks good Dwain.I haven't seen any tiger sauce around here in a while. We used to keep it at the fire station. Now I wish I hadnt made leftovers :(
 
Thanks for the comments folks. It is nice living on a cpl acres in the hills of Northern Alabama. Makes for good BBQ.
