Did a SRF shoulder over night on Friday on the WSM. It was pretty good size - weighing in at 19.7 pounds.
It's an interesting cut - They have Kurobuta Berkshire pigs and I think its basically an entire front leg / shoulder -It's the Boston butt, picnic shoulder, fore shank and the pork collar.
all rubbed up, and ready to go:
I put it on Friday night at midnight at 235. I finally scored a couple of bags of the Jealous Devil lump charcoal that folks here rave about. I used a couple of hunks of apple wood as well. It fit just perfectly.
I took a peak the next morning around 8:00 AM ... things appear to be coming along well:
It took about 13 hours - when all was said and done it produced about 11 pounds of pork which we bagged and popped in the freezer. It came out good - We made up some dirty fries. I like the color of these pigs- the dark parks have a much deeper red than the store ones -
