Spiced Chicken with Grilled Peach Salsa

Another quick dinner after a day of painting. All the players which will be divided between the chicken and salsa. First I put Cumin, Fennel and Coriander seeds in small skillet over medium heat to toast, when cool coarsely grind in a spice grinder. Then combine 2 tsp. of spice mixture with lime rind, juice, honey, salt and pepper, place in a bag with chicken to marinate for 1 hour.

Chicken on the Smokie Joe for about 4 minutes aside.

Peaches getting some nice grill marks for the salsa.

Coarsely chop peaches placed in bowl along with juices and add remaining 1 tsp. spice mixture, 2Tbsp. lime juice, ¼ tsp pepper and salt, ½ cup cilantro, 1 Tbsp. EVOO and 2 large scallions thinly sliced.

Chicken plated with the salsa and Caprese salad, it was delicious.

Wow . that looks so nice. Very elegant. My wife loves fruit on the grill and I seldom think of it.
 
Beautiful summertime grilling Barb! The glass of white wine in your first pic looks very refreshing which I'm sure it was after more painting for you!

The only thing I'd do differently is:
...place in a bag with chicken to marinate for 1 hour.
marinate for 2 hours.... and use that extra hour to "get ready to eet" dinner ;)
