I was looking at some Surfin Sapo videos last week and he made some spatchcock chicken that he cooked on an offset smoker. I put it on my list since I had never made it. After a long day of college football I finally got around to it last night. Seasoned with Weber's Kickin Chicken.
I remembered seeing posts of people using their WSM for direct cooking so I thought I'd give it a try. One chimney of lit on half a chimney of unlit Kingsford. One big chunk of applewood also.
I had no idea how long it would take so I flipped it at 15 minutes out of curiosity. Then turned about every 25 minutes after that for a total cook time of an hour and forty minutes. The grill temp said 250 but I was unsure of the effect of the direct cooking. Sorry for the picture quality. No flash on my iPad and halogens used.
Off to rest and then plated with some potatoes Kim made indoors and salad.
