Spares for the 500

Wanted to cook some St. Louis cut spares for the big race today. Not an ideal day for barbecue for us today.

Got the ribs covered in mustard and home made rub this morning and then into the refrigerator to rest.

Set up with some apple wood for a long cook.

Gusting and swirling winds all day made it a challenge to hit the sweet spot on temp. But I like to fiddle with it and get it right. Otherwise I would cook them in my electric Masterbuilt.

At two hours moved the back to the front and turned them upside down.

Rain delay? Chilly day? No problem. We'll just do a little Montana tailgating!

Put some sauce on after 4.5 hours.

Plated after about five and a half hours with a twenty minute rest under foil.

I understand my friend, I am getting a little tired of it myself. Great shots of the Fam my friend and the ribs look delicious. Well done
 
Great cook and great looking family. I will say you're a tuffer bird then me, no way would I be out cooking in that weather!
 
Nice rib cook on the one touch. Looks like you guys had a good time just try not to send any of that snow down here.
 
Nice looking cook. My darn town by-laws prohibit open fires or I'd have one going for every winter cook. Bad weather but looks like a great day regardless.
