Spares and pig shots on the offset smoker.

I decided to cook some spare ribs and some pig shots on my offset for the Aggie game.


Ribs rubbed up.


Getting the smoker fired up.


Used lump to get started and used some Western pecan mixed with some seasoned oak I have. The oak still needs more time.


Got the fire going.


Ribs on the smoker.


Cooked ribs.


Pig shots on the smoker.


Sliced ribs.




Finished pig shots.

All in all a fun cook. Not my best ribs ever but I loved the smokiness. I much prefer the wsm but every now and again I need to burn sticks. Thanks for looking.

Nice cook Dustin. Hopefully you watched U of H give it to OU today. I had an offset years ago, I couldn't afford to keep it lit. Seemed like I put half a forest through that thing.
 
It's sausage that's wrapped in bacon forming a cup in which you put a mixture of sour cream, cream cheese, and grated cheese. I saw it on a YouTube video.
 
Brought back memories when I had my offset...all of them bad. Never could get the hang of the thing, like you said the WSM is my preferred smoker. Ribs look good and those pig shots just went into the bucket for a must do.
