Something I've never seen before

We’ve got an awesome Mexican grocer in a town about twenty miles from here. Maybe twice a month, they come up with some unique combo of ingredients to make sausages. Buddy and I saw this and had a lazy rainy Friday going on, and decided it was time to make a grocery run and a tavern tour on the way home.

I wasn’t quite sure how to treat these, but 50 degrees in January seems to call for charcoal to be lit! Grilled them. Added some homemade peach salsa. Queso on top. Back in the grill to melt. Got a bag of our homegrown sweet corn out of the freezer and made, basically, Mexican street corn deconstructed I guess you could say. Made blood orange margaritas.

I know they sold out. Man, I hope they do this again….

Looks good. I've not had a beef/chorizo combo sausage, but I have made "smashies" with finely diced chorizo through them. Very nice.
 
I love Andouille sausage but Chorizo & Beef Fajita sausage is a whole different ball game. (y)(y)
All good... blood orange margaritas, peach salsa and Mexican street corn, whats not to like..
