Here is part of a cook I did on the Ranch. Scallops in a cast iron skillet. They turned out perfect, and plenty of heat-and hold Space for the finished product...well, the ones I didn't eat while cookin!
Did up a huge stockpile of Siracha Jerky ala Steve Raichlin. Started with brisket and ended up with some tasty snacks.

The aforementioned failed cook a little into the process.
This cook "failed" because I didn't follow my gut instinct, and instead I followed a recipe. The end product was dry. Should have left the chucks whole and not panned. The after smokey I shoulda wrapped em up and finished them either on the grill or in the oven. Won't be second guessing my gut on beef again!
