Some old school chicken love

Yep. Thats right. Chicken Divan. I seriously think I haven't had this since 70s dinner parties.

Simple to make. Full disclosure: This was prepped inside and baked on the Genesis.

Poached 3 chicken breasts. Shredded and laid down in a greased baking dish.

Covered in several cups of broccoli.

And this is where it stops being entirely healthy. A lot of sauce.

Poured atop everything.

Topped with breadcrumbs and parmesan. Went a bit heavy with the paprika.

15 minutes, covered, at 350°. Then uncovered for another 20 minutes.

I love how the gasser keeps its temps. This was really, really good. Sent me immediately back in time. My finished pics don't do it justice.

I love that dish! We went to Emerald Isle, NC every summer in from the mid 80's to mid 90's. Every year, a frozen batch of that made the trip with us and was one of our dinners. Ah, memories...

You just motivated me. I'm going to make a batch - maybe a double - my kids would love this for school lunches.
 
This seems like the perfect dish to try out my recent purchase from Amazon Haul.
I figured this shredder would be a "one use then into the Goodwill box" item, but for $1.07 I had to try it.
If it does okay and doesn't take up much room, I might keep it around for white chili and Tim's Chicken Divan.
