Sliced Turkey Breast

I gotta say that getting a meat slicer was a game changer for the WSM. Here is the latest. I got a turkey breast roast and brined it in a basic brine for 4 hours. The I covered in Cajun Seasoning and smoked low and slow over some chunks of oak wine barrels.









Came out great! My only complaint is that the roast had the skin on one side. I assume this was so it would melt into the meat as it cooked in an oven. I thought about cutting off the net, trimming it, then re-netting before seasoning....but that seemed like too much work. I ended up removing after and lost some of the outer coating. It still tastes great!
