Hey folks, not posting much but still love this place and check in 10x per day for information, inspiration and motivation. Kind of a crazy evening led to a late (for us, early for Tony) cook! Skirt steak - KS, P, Onion and dash of Lowry's and cumin for me. Bone in Strip, KS, P, cumin and adobo for the missus.


Lid cracked to increase air flow and temperature!


Here is your action shot...cooking over Carbon Del Sur lump and a split of pecan.

And plated - with queso fresco, a slice of white bread dredged in steak juices (tribute to mom - don't knock it until you try it!) and skirt steak with an extra large Malibu Bay Breeze to wash things down. Excellent Wednesday meal...enjoy rest of your week folks. Keep cooking!!
