Simple quick hump day dinner cook

Wife was at work and the 2 1/2 yo twins were occupying themselves. Had some chicken thighs marinating all day. Cranked up JJ and made some garlic potatoes. Added queso fresco cheese for last 2 minutes. Had 3 potatoes so I just wrapped them up in aluminum foil and threw them on too. Wife got home when I was pulling everything off and it's all gone. Delicious simple meal. :)

Don't remember where I saw the idea, but it was on one of the bbq forums. Pretty simple though.

This is what I did - thin slice the potatoes - tossed them with evoo, salt, pepper and a lot of garlic - put additional evoo in the small CI skillet - place the potatoes in the CI standing up (started on the perimeter and work your way to the center of CI) - cover with foil - put it on the grill (I was partial direct in the pic above so I just rotated the skillet 1/4 turn, few min on each side until done) - removed foil and added the cheese and left on the grill to melt a little.

Hope that helps. You can season and put what ever you want in this.
 
Great looking meal, Nate. Agree with Jim, those garlic potatoes really caught my eye. I was going to ask about them but he beat me to it. Thanks for the recipe details.
