Simple Beef Roast Dinner

The weather here has been super nice this past week. No winds, 80+ and sunny.
Time to start doing more grillin’
Had a dog food special eye of the round roast that was calling me.

Injected the roast with sodium free beef broth mixed with Trader Joe 21 spice salt free seasoning. Some Penzey’s California pepper blend and some lite salt on the outside

Fired up the performer with Royal Oak and some beech wood for smoke.
Ran the performer at dome temp of 350.
Pulled the roast at 130 rested for 10 minuets .

Barb made some parmesan baked red potatoes and a grilled zucchini with olive oil and butter, Weber’s veggie seasoning and some parmesan and mozzarella cheese on the E310 gasser for the sides.

Spring has sprung.

Simple quick dinner that was very good.
I really liked the injection as it kept the meat very moist and tender.

Simple never looked so darned good!

Bradford pears are starting to bloom here, but that's about all.
Hit a whopping 41 today for the high! :(
 
Nothing wrong with a simple cook. I think that's all mine are. The street is looking good Rich. Like a lot of other people around here, I am gettin' real impatient waiting for Spring to arrive. Still below freezing. :(

This is unseasonably warm for us and the worst part is less than an inch of rain since September. The folks who know are saying this will be the worst fire season in over 100 years. So best get my grilling time in now because I suspect fire restrictions will be right around the 1st of May if not sooner.
At the end of our street is miles and miles of open land you can see where it starts in the tree picture, that mountain in the center is about 20 miles away and you can see how brown it is out there. We let our pups run out there every day and almost every day Whitney would spook up a couple of rabbits to chase, haven't seen one this year. Same with coyotes would see them heading home in the morning or hear them howling in the dark early morning nothing at all this year.
Normally at this time of the year the weeds and grasses are all green in the fields. Today Barb and I commented that every thing was still brown and very dry. Not good.

Sorry to hear about your weather! You have my blessings and prayers for more “seasonable weather” we had an inch of snow today and “they” are saying another is on tap for tomorrow! More for the next four days too! Very unusual.
I am now inspired to do another stab at an eye of round roast, they are often available at a reasonable price and with the slicer, I can roast and shave the rascal into delightful roast beef sandwiches!

Eye of the round is a very lean roast that's why I injected it. The broth keeps it from drying out. I've done this the last three times and it's always moist and very tender as compared to dry and pretty tough.
I do the same, have one dinner then the rest sliced thin for RB sammies.
 
That roast looks delicious Rich. Nice cook. Feel your pain with the ongoing drought issues. We live with the same sense of foreboding each year, which has intensified in light of what happened in California last year. I'm just getting started on my spring weed and brush cutting.

I know what you're going through. The drought here is going on it's 18th year it's really getting scary. Very familiar with your area, Barbs brother lived in Redding and had property up in Shingle town. You have more trees close to you than we do. We have national forests surrounding us although not super close to us but we have thousands of acres of brush that are right next to where we live that's 2-3' high and bone dry.
